Firms also reduced working hours, decreased their use of agency workers and allocated more work to junior staff. This suggests that there is a variety of ways firms can adjust their labour costs, even in the presence of wage rigidity.

Policy implications In the United Kingdom many firms tend not to adjust wages downwards. Writing Hunger: A Modern History took me into many areas—chronological, geographical, historiographical—in which I was often scandalously ignorant.

I am bound to have made some embarrassing mistakes and to have neglected areas that some people consider essential, for which I apologize in advance. Hunger, after all, is a big subject.
